Because Jack is pretending that everyone on the plane died except for the famous 6, I guess he had to play it off like Claire was just another face in the crowd. If he'd called Kate over it may have been too obvious.
I do think that he tells Kate at some point because his comment about Kate not being related to Aaron did seem very pointed. Their relationship is very complicated, I'm not at all surprised that they couldn't make it work. If he'd said that to me about my son, his butt would be out the door in an instant.
