This question is easy.

Eggs are basically considered a very fragile object, which has been used in this case to reflect the state of the village in which Locke is holding Ben.

Basically, If we all look back at our video recordings/online streaming/whatever to the part where Locke throws the plate of eggs against the 'concrete' wall, it is very clear that this wall wobbles.. hence the meaning of the episode. The town isn't as concrete as once thought, and is infact as fragile as an egg.

Yes, this is entirely true. No, i'm positive it wasn't just a blooper.
